A half shoulder of lamb, taken from the knuckle end of the shoulder. The knuckle end contains more bone than the blade end, which makes it perfect for slow-roasting, with flavourful meat that falls off the bone when pulled with a fork. Our lamb is fully traceable, as it is born and reared on the farm and the surrounding hillsides, using traditional stockmanship methods.
