Cellar-matured for 14 months, with a distinctive, strong, but complex flavour, developing through notes of fruit to a more earthy or nutty flavour. A hard, dry cheese with infrequent eyes. A good table cheese, but better for cooking, it is a classic choice for Swiss fondue.Please Note: All of our cheeses can be cut in 100g, 200g, 400g, and 600g slices.
